THE RETREAT Recipe – Part 1

Recipe Part 1: I have decided to start regularly sharing some of my recipe’s with you to show you how easy it is to eat good, healthy homemade food that is not only delicious but also full of nutritional value. I shall begin, on this cold Sunday night with a wonderfully warming Chicken & Barley Soup, a simple and easy winter recipe.


  • Organic Chicken
  • Tomatoes
  • Pearl Barley
  • Onions
  • Garlic
  • Broccoli
  • Courgette

Find the biggest pot/saucepan you have. Cut up loads of veg – whichever veg you fancy (there’s no rules here, just a nice complete mix), seasonal and organic are preferable. Place all the veg into the pot with a tiny drop of Vegetable Oil and cook. Stir slowly using a wooden spoon. When the Veg is soft and slightly browned pour boiling hot Water in until all Veg is covered up. Place between 6 – 10 Chicken thighs (only use organic) in a separate wok style saucepan (tiny drop of Vegetable Oil to keep it moist), and cook until browned. Put to one side when it’s cooked through, drain off any liquid. Then add the Chicken to the Vegetable pot. Add 2 – 3 Chicken cubes and put under a slow heat for 1 hour. Add 6 baby Tomatoes – not cut up. Add a good few handfuls of Barley, put a lid on it and wait for the yummy smell to rise up. Add more Water if necessary. The Barley will expand and turn your Soup into a Stew!
